I get this feeling whenever I listen to the first interlude of "Enadhu vizhi vazhi meley" from Solla thudikkudhu manasu. The interlude proceeds along very predicatble lines, before knocking you out towards the very end, with a completely unexpected change.
Ditto with the second interlude of "Kai veesum thaamarai" from Kairaasikkaaran. Please share more songs of this category.

Many second charanam interludes in IR's songs have this unpredicatble twists giving altogether a differEnt dimension.
Here are few which I can instantly recall
Ananda raagam ketkum kaalam(PP)- 2nd interlude charts into WCM layers.
AppadiPaakrathuna venam from Ivan(2nd interlude - Just notice the raga pravaaham in Vasantha with swift violin strokes)- This interlude almost chokes me.
Enna sollipaaduvadho from EMV - Again the 2nd interlude has an interesting twist to WCM territory.
There are so many like 2nd interlude with SJ's humming and stunning violins,flute passages in Putham pudhu kaalai

You left out - Andhi mazhai, Edho moham, Vizhiyile mani vizhiyil, etc in the same category.

While the songs mentioned above (ananda raagam, appadi, have a breathtaking virtuosity associated with them, they don't have a dramatic mood change within a single interlude. Apdi paakkarathunna, has a lovely second interlude that is different from the first, but in itself it is highly consistent, does not have an unexpected twist.
Paadu nilavey - definitely has a chilling twist towards the end. You can almost feel Ilai, getting into screenplay there. another song that comes to my mind is second interlude from Vanithamani. There is a sombre end to the i2nd nterlude. In most situational songs, IR would intercut across 2 moods, definitely inferior going by IR standards (Yaar veettu roja; Paadava un paadalai; Aattama therottamaa). In vanithamani, he seamlessly blends the romantic duet with lurking danger.
Needless to add, these are just my opinions.
Andhi mazhai, edho mogam would not fall in this category.
Maybe vizhiyiley a bit.
Just try listening to Kaiveesum thaamarai second interlude (towards the very end) to understand, the kind of songs I'm searching for. I'm sure there are tonnes of such songs from IR

'Vanthanam En Vanthanam' (Vaazhve Maayam)-- the second interlude is so entirely different from the first, I can't help but rewind the song just for that second interlude.
'Adukku Malli' (Avarampoo)-- The song seems like just another folk song until the first interlude. Then some fantastic WCM breaks in.
'Gaandheyayum Paarthathillai' (Punniyavathi)-- Although a very average song, the interludes are done with such vigor, it just knocks you out.
'Naan Ippothum Eppothum' (Chinnathaayi)-- the 2nd interlude is absolutely amazing. Enough said.
'Poonkathave' (Nizhalgal)-- watch out for the mridangam and shehnai in the first interlude.
